A note about chicken! Claire brines all of our poultry overnight before grilling, searing or braising. This produces moist, tender chicken..ask her about it at our next tasting.

A note about farmed salmon: We prefer to use Loch Duarte from Scotland. Theirs is a closed loop farming system that is healthy for the fish and for the environment. We can offer Atlantic farmed salmon, if you wish at a lower price. For salmon in season, we try to get California King salmon…always priced at time of event.
(We are proud to follow the guidelines of the Monterey Bay Aquarium for sustainable seafood.)
